Ingredients

  • 1 (10-ounce) package frozen chopped spinach, thawed and squeezed to get the water out
  • 1/4 cup low-fat sour cream
  • 2 green onions, sliced
  • 1 cup crumbled feta cheese
  • 1/2 teaspoon Creole seasoning
  • 1/4 teaspoon black pepper
  • 12 large white mushrooms, stems removed
  • 2 tablespoons grated Parmesan cheese

Instructions

  1. In a medium bowl, stir together spinach, sour cream, green onion, feta cheese, Creole seasoning, and black pepper.

  2. Fill the mushrrom caps with the spinach mixture.

  3. Sprinkle Parmesan on top.

  4. Preheat air fryer to 390 degrees.

    Air fry in for 6 to 8 minutes. Air fry them in two batches if necessary. You don't want to crowd the basket.

Recipe Notes

These stuffed mushrooms can be prepped ahead of time and refrigerated until you are ready to air fry them.
