Ingredients

  • 2 boneless skinless chicken breasts
  • salt and pepper
  • 1/2 teaspoon chipotle chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 red bell pepper, thinly sliced
  • 1/4 red onion, thinly sliced
  • 1/2 cup shredded Mexican cheese
  • chopped fresh cilantro and lime juice for serving, optional

Instructions

  1. Carefully make 5 or 6 slits crosswise along chicken, cutting 3/4 of the way through.

  2. Season chicken with salt and pepper.

  3. Sprinkle chili powder, cumin, and garlic powder on chicken and down in the slits.

  4. Stuff the slits with red bell pepper and red onion.

  5. Lightly spray air fryer basket with cooking spray. Place chicken in basket and lightly spray the tops of the chicken.

  6. Air fry at 350 degrees for 13 minutes.

  7. Open air fryer, sprinkle cheese on top and air fry for another 1 to 2 minutes.

  8. Sprinkle with a little lime juice and chopped fresh cilantro.
