Ingredients

  • 8 ounces Italian sausage, cooked and crumbled
  • 6 large eggs
  • 1/4 cup pizza sauce (sugar-free)
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons freshly grated Parmesan cheese
  • 1/4 teaspoon Italian seasoning

Instructions

  1. Preheat oven to 375 degrees and spray a 6-cup muffin tin really well with cooking spray.

  2. Divide the sausage evenly between the 6 muffin cups.

  3. Crack an egg into each one over the sausage, trying to keep the egg yolk intact.

  4. Bake for 12 to 14 minutes.

  5. Remove from oven and prinkle the mozzarella cheese and Parmesan cheese on the egg cups.

  6. Sprinkle a little Italian seaosning on each one.

  7. Return to oven for 2 to 3 minutes to melt the cheese.

  8. Immediately run a knife around the edge of each egg cup to loosen it and as soon as they are cool enough to handle, remove them from the muffin tin.

Recipe Notes

Be Sure to spray your muffin tin well or the egg cups will stick. Even better, use silicone liners.
