Clean 4-Bean Salad is made up of 4 types of beans tossed in a tangy vinaigrette. It's a great healthy recipe for summer potlucks and picnics.

Ingredients

  • 1 (14-ounce) can black beans
  • 1 (14-ounce) can kidney beans
  • 1 (14-ounce) can garbanzo beans
  • 1 (14-ounce) can green beans
  • 1/3 cup finely chopped red onion
  • 1/3 cup red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 2 garlic cloves minced
  • 1/4 cup olive oil
  • 1/4 teaspoon pepper
  • salt
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Combine beans and red onion in a large bowl.

  2. In a small bowl, whisk together vinegar, mustard, honey and oil. Pour over bean mixture and stir to mix.

  3. Add pepper and parsley and season to taste with salt.

  4. Refrigerate for at least 4 hours, preferably 24 hours, before serving. Give it a stir or two during this time.
