Ingredients

  • 2 pounds boneless beef chuck, trimmed of excess fat and cut into 1-inch cubes
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons avocado oil or extra-virgin olive oil
  • 1 cup chopped yellow onion
  • 3 garlic cloves, minced
  • 3 cups beef broth
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup canned chipotles in adobo sauce
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon coconut flour
  • Sour cream, cilantro for serving

Instructions

  1. Season the beef with salt and pepper. Heat the oil in a large Dutch oven over medium-high heat.

  2. Add half the beef and cook until browned on all sides. Remove and set aside. Add the remaining beef. Once it is browned, remove it from the Dutch oven and set it aside with the rest of the browned beef.

  3. Add the onion and cook for 4 minutes. Add garlic and cook 1 more minute.

  4. Return beef to the Dutch oven and add the broth, spices, and chipotle chilis.

  5. Bring to a simmer, cover the Dutch oven and cook for 2 hours, stirring occcasionally.

  6. Stir in the vinegar. Remove 1/4 cup of broth from the Dutch oven and place in a bowl. Whisk the coconut flour into the broth. Add back to the Dutch oven and stir well. Simmer uncovered for 5 minutes.
