Ingredients

  • 1 (10-ounce) boneless, skinless chicken breast
  • 1/2 medium red onion, coarsley chopped
  • 1/2 red bell pepper, coarsley chopped
  • 1/2 medium zucchini, coarsely chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried thyme
  • salt and pepper
  • 1 1/2 tablespoons olive, coconut, or avocado oil
  • 2 tablespoons crumbled feta cheese

Instructions

  1. Cut chicken into 1-inch cubes.

    Combine chicken, red onion, bell pepper, and zucchini in a medium bowl.

  2. Add oregano, parsley, garlic powder and thyme. Season to taste with salt and pepper.

  3. Drizzle with oil and toss to coat evenly.

  4. Place mixture in the Air Fryer basket and cook at 380 degrees for 12 to 15 minutes, shaking basket halfway through.

  5. Sprinkle with feta cheese and serve.
