Ingredients

  • 4 to 5 medium carrots
  • 3 tablespoons lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon honey or maple syrup
  • pinch of salt
  • 1/3 cup crumbled feta cheese, use vegan feta to make this a vegan recipe
  • 1/4 cup chopped roasted pistachios
  • 1 tablespoon chopped fresh mint

Instructions

  1. Peel carrots and then cut into ribbons using a vegetable peeler. You will end up discarding the very middle part of the carrot.

  2. Place carrots in a bowl of ice water for 20 minutes. This will help crispen them up.

  3. In a small bowl, whisk together the lemon juice, olive oil, honey, and salt.

  4. Drain the ice water from the carrots and dry them on paper towels.

  5. In a medium bowl, toss the carrots with the lemon dressing.

  6. Sprinkle the feta, pistachios and mint on top. Serve.

Recipe Notes

Use regular feta cheese for a non-vegan recipe.
