Air Fryer Zucchini Chips

Air Fryer Zucchini Chips are breaded with Panko crumbs and Parmesan cheese and cooked until perfectly crispy with just a minimal amount of oil.

Ingredients

  • 2 medium zucchini, cut into 1/4 to 1/2-inch thick circles
  • 1/2 cup flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon Italian seasoning
  • 2 large eggs
  • 1 cup Panko crumbs
  • 3 tablespoons grated Parmesan cheese
  • olive or vegetable oil

Instructions

  1. On a plate, combine flour, salt, pepper, and Italian seasoning.

  2. Whisk together eggs with 2 teaspoons of water in a bowl.

  3. Combine Panko crumbs and Parmesan cheese on a plate.

  4. Coat zucchini slices in flour, dip in egg, and then press them into the Panko crumb mixture.

  5. Preheat air fryer to 400 degrees.

  6. Spritz both sides of zucchini chips with oil. Spritz the air fryer basket with oil. Place them in the air fryer basket in a single layer. Fry them in 2 batches.

  7. Air fry at 400 degrees for 8 minutes, flipping over halfway through. I also like to spritz them with a little more oil when I flip them.
