These Spicy Chicken Taquitos have a creamy filling and get so crispy in the air fryer!
Start by making Avocado Sauce. Combine avocado, sour cream, cilantro, and lime juice in a food processor and process until smooth.
Season to taste with salt and pepper. Refrigerate until needed.
Note: If you don't have a food processor, you can use a blender, or mash by hand until smooth.
In a medium bowl stir together chicken, cream cheese, chipotle peppers, chili powder, and cumin until evenly mixed.
Cover tortillas with a damp paper towel and microwave for 3o seconds to make more pliable.
Sprinkle a few tablespoons of cheese on a tortilla and then spread about 1/4 cup of filling towards one side. Roll up tightly. Repeat with 5 more.
Lightly spray air fryer basket with oil. Add the 6 taquitos seam side down and spray the tops with oil.
Air fry at 400 degrees for 6 to 7 minutes.
Repeat with remaining tortillas for a second batch.
To serve, drizzle with Avocado sauce and top with Pico de gallo, cilantro, and Queso Fresco.
