Ingredients

  • 1 teaspoon butter or extra-virgin coconut oil
  • 1 Golden Delicious or Honeycrisp apple, peeled, cored, and diced
  • 2 tablespoons pure maple syrup
  • 1 teaspoon ground cinnamon
  • pinch of sea salt
  • 3/4 cup old-fashioned oats
  • 1 cup unsweetened almond milk
  • 1/4 cup Greek yogurt
  • 1 tablespoon Chia seeds
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped toasted pecans or walnuts

Instructions

  1. Heat the butter or coconut oil in a small nonstick skillet over medium heat.

  2. Add the diced apple, maple syrup, cinnamon, and salt.

    Cook for 4 to 5 minutes, stirring occasionally. Remove from heat and let cool.

  3. In a medium bowl, stir together oats, almond milk, yogurt, chia seeds, and vanilla.

  4. Stir in cooled apple mixture. Cover and refrigerate at least 4 hours or overnight.

  5. Sprinkle with chopped pecans and serve.

    If oats are too thick, you can add extra almond milk.
