Ingredients

  • 1 large spaghetti squash
  • 1 tablespoon olive oil
  • salt and pepper
  • 3/4 cup ricotta cheese
  • 1/3 cup freshly grated Parmesan cheese
  • 3 large eggs
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1 1/2 cups shredded mozzarella cheese, divided
  • 1 cup sugar-free marinara sauce

Instructions

  1. Preheat oven to 400 degrees. Line a baking sheet with parchment paper.

  2. Cut the ends off the spaghetti squash. Cut the spaghetti squash into 3 to 4 rings. Scoop out the seeds.

  3. Place the rings on the baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.

  4. Bake for 40 minutes. Use a fork to pull the strands out.

  5. Reduce oven temperature to 375 degrees.

  6. In a large whisking bowl, whisk together ricotta cheese, Parmesan cheese, eggs, Italian seasoning, salt, pepper, and red pepper flakes.

  7. Stir in the spaghetti squash and 1/2 cup of mozzarella cheese.

  8. Transfer mixture to a greased deep dish 9-inch pie pan. Bake for 30 minutes.

  9. Spread the marinara sauce on top. Sprinkle with remaining mozzarella cheese. Bake 15 minutes.

  10. Let cool 10 minutes and slice.
