Ingredients

Peanut Dressing

  • 1/4 cup natural peanut butter
  • 2 tablespoons half-and-half
  • 1 1/2 tablespoons rice wine vinegar
  • 1 1/2 tablespoons Coconut aminos or gluten-free soy sauce
  • 2 teaspoons erythritol or other sugar substitute
  • 1 teaspoon seasme oil
  • 1 garlic clove, minced
  • 1/2 teaspoon crushed red pepper flakes
  • 1/4 teaspoon ground ginger

Slaw

  • 1 (16-ounce) bag shredded coleslaw mix
  • 2 green onions, sliced
  • 2 tablespoons chopped fresh cilantro
  • 1/4 cup chopped roasted peanuts

Instructions

  1. Place all Peanut Dressing ingredients in a large bowl and whisk until smooth. Microwave for 10 seconds if you need the peanut butter to melt some.

  2. Add coleslaw mix, green onions, and cilantro. Stir well and refrigerate for at least 1 hour.

  3. Sprinkle peanuts on top and serve.
