Cheesy Chorizo Breakfast Casserole is a low carb breakfast full of spice and Tex-Mex flavors.
Preheat oven to 350 degrees.
Melt butter in a large nonstick skillet. Add chorizo and break it apart. Once chorizo is in pieces, add onion, pepper, and mushrooms.
Cook until chorizo is cooked through, breaking it apart more as it cooks.
Add cream cheese to the skillet and stir until melted. Transfer mixture to a 7x11-inch greased baking dish.
In a medium bowl, whisk together eggs, milk, salt, and pepper. Stir in both types of cheese.
Pour egg mixture over chorizo mixture.
Bake for 30 to 35 minutes, or until cooked through.
Serve with avocado, green onions, and sour cream if desired.
