Ingredients

  • 1 teaspoon butter
  • 12 ounces Mexican-style ground chorizo
  • 1/2 cup diced onion
  • 1/2 cup diced green bell pepper or poblano pepper
  • 4 ounces sliced white or cemini mushrooms
  • 4 ounces cheam cheese, cut into pieces and softened
  • 8 large eggs
  • 2 tablespoons half-and-half or heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup shredded Pepper Jack cheese
  • 1/2 cup shredded sharp cheddar cheese
  • sour cream, sliced green onion, and sliced avocado for serving, optional

Instructions

  1. Preheat oven to 350 degrees.

  2. Melt butter in a large nonstick skillet. Add chorizo and break it apart. Once chorizo is in pieces, add onion, pepper, and mushrooms.

    Cook until chorizo is cooked through, breaking it apart more as it cooks.

  3. Add cream cheese to the skillet and stir until melted. Transfer mixture to a 7x11-inch greased baking dish.

  4. In a medium bowl, whisk together eggs, milk, salt, and pepper. Stir in both types of cheese.

  5. Pour egg mixture over chorizo mixture.

  6. Bake for 30 to 35 minutes, or until cooked through.

  7. Serve with avocado, green onions, and sour cream if desired.
