Skinny Mashed Potatoes taste wonderfully creamy and buttery but they are so much lighter than regular mashed potatoes. And lower in calories and fat too!
Place potatoes in a large pot and cover with water. Bring to a boil. Simmer for 20 minutes or until soft.
Drain potatoes and return to pot. Place pot over low heat for just a few seconds to evaporate any excess water.
Remove from heat and add chicken broth, milk, butter, salt and pepper.
Mash until smooth with a potato masher or use a potato ricer. Taste for seasoning and add more salt and pepper to taste. Sprinkle chives on top if desired.
