Skinny Mashed Potatoes

Skinny Mashed Potatoes taste wonderfully creamy and buttery but they are so much lighter than regular mashed potatoes. And lower in calories and fat too!

Ingredients

  • 2 pounds Yukon Gold potatoes, peeled and cut into quarters
  • 1/4 cup chicken broth
  • 1/3 cup 1% milk
  • 1 tablespoon butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon chopped fresh chives, optional

Instructions

  1. Place potatoes in a large pot and cover with water. Bring to a boil. Simmer for 20 minutes or until soft.

  2. Drain potatoes and return to pot. Place pot over low heat for just a few seconds to evaporate any excess water.

  3. Remove from heat and add chicken broth, milk, butter, salt and pepper. 

  4. Mash until smooth with a potato masher or use a potato ricer. Taste for seasoning and add more salt and pepper to taste. Sprinkle chives on top if desired.
