Pizza Eggs are flavored with pizza sauce, pepperoni slices, and three kinds of cheese. This is my new favorite low carb, Keto-friendly breakfast.
I’ve been making this recipe at least one time a week. A combination of feta cheese, mozzarella, and Parmesan cheese add a ton of flavor to these Pizza Eggs. I especially like the flavor the feta cheese adds. You could use goat cheese instead of feta and I think cheddar cheese would work really well too.
Tips for making Pizza Eggs:
- For best success with this recipe, you will need a very small nonstick skillet (5 to 6 inches across) so that the eggs do not spread out too much. If you have a large round cookie cutter, you could spray it with cooking spray and use it in a large skillet. Just crack your eggs right into the cookie cutter.
- If you want to make a homemade, low carb pizza sauce, you can easily make one by simmering 1 8-ounce can of tomato sauce, 1 6-ounce can of tomato paste, garlic powder, Italian seasoning, and crushed red pepper flakes. You can freeze it in small portions by freezing it in an ice cube tray. Just defrost a cube in the refrigerator the night before you want to eat Pizza Eggs for breakfast.
- Leave off the pepperoni if you want to make this recipe vegetarian. You could add a few sauteed mushrooms, onions, or some spinach.
