I love cooking chicken in the air fryer. It cooks really fast and gets the outside wonderfully golden while the inside stays tender and juicy.
Low carb Mexican meals are hard to come by. But take away the tortillas and rice and you still have so much flavor without all the carbs.
Serve this Mexican chicken with a salad of shredded iceberg, diced avocado, and tomato for a healthy, delicious low carb meal.
Typically hasselbacking (is that even a word) is a technique done to potatoes, but I really love it with chicken. Chicken can be a little bland and boring and it can dry out easily. But when you hasselback it and stuff the slits with ingredients full of flavor, there’s no way it’s going to turn out bland. Plus cutting the slits allows the chicken to cook faster and it is less likely to dry out.

Be careful not to cut too deeply when you cut the slits.
Stuff as many peppers and onions into the slits as you can.

Ingredients
- 2 boneless skinless chicken breasts
- salt and pepper
- 1/2 teaspoon chipotle chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 red bell pepper, thinly sliced
- 1/4 red onion, thinly sliced
- 1/2 cup shredded Mexican cheese
- chopped fresh cilantro and lime juice for serving, optional
Instructions

Carefully make 5 or 6 slits crosswise along chicken, cutting 3/4 of the way through.

Season chicken with salt and pepper.

Sprinkle chili powder, cumin, and garlic powder on chicken and down in the slits.

Stuff the slits with red bell pepper and red onion.

Lightly spray air fryer basket with cooking spray. Place chicken in basket and lightly spray the tops of the chicken.

Air fry at 350 degrees for 13 minutes.

Open air fryer, sprinkle cheese on top and air fry for another 1 to 2 minutes.

Sprinkle with a little lime juice and chopped fresh cilantro.
